Mee Rebus
Yellow noodles served in a thick, sweet-spicy potato-based gravy. A hearty Malay dish that defines comfort food.
Ingredients
- 500g Yellow Noodles (blanched)
- Gravy Thickener: 500g Sweet Potatoes (boiled and mashed)
- Spices: Lemongrass, Blue Ginger, Curry Powder, Dried Shrimp, Salted Soy Beans (Tau Cheo)
- Stock: Meat stock or Prawn stock
- Garnishes: Hard boiled egg, Green chilli, Fried shallots, Tau Pok, Lime
Instructions
Prep Sweet Potato
Boil sweet potatoes until soft. Mash them finely or blend them with a little water. This is the natural thickener for the gravy.
Fry Aromatics
Fry blended dried shrimp, shallots, garlic, and curry powder until fragrant. Add bruised lemongrass and mashed Tau Cheo.
Simmer Gravy
Add stock and bring to a boil. Stir in the mashed sweet potato. Simmer on low heat. The gravy will thicken as the potato breaks down further. Season with sugar and salt.
Serve
Blanch noodles and bean sprouts. Pour the thick gravy over. Garnish lavishly.
Chef's Note
"Orange, yellow, or white sweet potatoes will all work, but orange ones give the gravy that beautiful golden hue naturally without needing food colouring."
