Zi Char Cereal Prawns

Large tiger prawns tossed in a buttery, sugary, crispy cereal mix with curry leaves and chilli. Sweet, savoury, and addictive.

Ingredients

  • 8-10 Large Tiger Prawns (trimmed, legs cut, but shell ON)
  • 1 cup Nestum Cereal (original)
  • 50g Butter (unsalted)
  • 2 sprigs Curry Leaves
  • 3 Chilli Padi (sliced)
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1 tsp Milk powder (secret ingredient for creaminess)

Instructions

Deep Fry Prawns

Deep fry the prawns in hot oil for 1-2 minutes until they turn orange and shells are crisp. Drain well.

Fry Cereal

In a clean work, melt the butter. Add curry leaves and chilli padi. Fry until fragrant (butter foams).

Toss

Lower heat. Add the Nestum cereal, sugar, salt, and milk powder. Stir continuously until the cereal turns golden and crispy. Watch closely so it doesn't burn.

Combine

Add the fried prawns back in. Toss to coat lightly. Serve immediately.

Chef's Note

"Keep the prawn shells ON. The cereal sticks to the shell, not the meat. Plus, the shells (after frying) are delicious and crunchy enough to eat."
