Ingredients

  • 1 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1.5 cups sugar
  • 4 egg yolks (for curd)
  • 4 egg whites (for meringue)
  • 1/2 tsp cream of tartar

Method

    Cook lemon juice, zest, sugar, and yolks over double boiler until thick.

    Pour into pre-baked crust.

    Whip egg whites with cream of tartar and sugar until stiff peaks form.

    Pile meringue high. Higher!

    Toast with a blowtorch or in oven until golden.
